Blanching~

You boil water, chuck in green stuff for, like, a minute tops, drain it and chuck the green stuff in cold water. Instant pretty green stuff!

So far as I'm aware it works on any cookable green stuff. Bok choy, broccolini, beans, snow peas, whatever. I haven't tried it with spinach but I imagine that'd work, too.
